I have my pool already setup and it is working perfectly fine.

I have my drives in a JBOD that are attached to a backplane, and they seem to be heating up quite a bit, so I was wanting to rearrange them in a honeycomb pattern since I have a bit of empty caddies. Will this screw up my data? or will it be able to rebuilt just fine since they will be technically be "different" disc numbers?

You should be fine. DrivePool identifies poolpart drives by the data internal to each drive, not their position on a controller. Basically so long as Windows can find and read the drives (e.g. they show up in Disk Management as basic NTFS volumes), so too should DrivePool.
